Our Mogette beans from the Vendée region of France were sowed during the months of May and June, and it is now time – 90 days down the line – to harvest and transform them.
Mogette beans are harvested fresh and frozen within hours to preserve their taste and many nutritional benefits. They have become a staple of the Vendean terroir.
The beans are known as “semi-dried” as they contain 50% humidity. This allows them to be cooked directly, without having to soak them beforehand. The softness and feel of their texture is one of the reasons they are recognised by the French “Label Rouge” certifying agency.
